There is no bolster, but there is a full-tang. As with more expensive Wüsthof Classic knives, Gourmet handles are made of a triple-riveted, black composite material that is shaped to fit the hand comfortably and is emblazoned with the brand's red trident symbol.
• This 14-piece set meets a wide variety of chopping, slicing, and mincing needs. The set consists of a 17-slot oak block and 13 knives and utensils as follows: 3-inch paring; 4-1/2-inch utility; 7-inch santoku; 7-inch cook's; 8-inch bread; 6 4-1/2-inch steak; shears; 9-inch sharpening steel.
